Roasted Autumn Veggie Salad with Maple Dijon Vinaigrette


Ingredients (serves 4):
  • 1 small butternut squash (peeled & cubed)
  • 3 medium beets (peeled & cubed)
  • 2 crisp apples (like Honeycrisp or Gala), sliced
  • 1 small red onion, sliced
  • 4 cups mixed greens (kale,spinach, arugula, or market lettuce mix)
  • ½ cup toasted walnuts or pumpkin seeds ½ cup crumbled goat cheese or feta (optional)
  • Olive oil, salt, pepper
Maple Dijon Vinaigrette:
  •  3 tbsp olive oil 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp pure maple syrup
  • Pinch of salt & pepper

Instructions:
Preheat oven to 400°F. On a sheet pan, toss squash, beets, and onion with olive oil, salt, and pepper. Roast for 25–30 minutes, stirring once, until tender and caramelized. While veggies roast, whisk vinaigrette ingredients together. In a large bowl, layer greens, roasted veggies, apple slices, and nuts. Drizzle with vinaigrette, toss gently, and top with optional cheese.

🍎🥧 Easy Apple Pie with Farmers Market Fresh Ingredients 🥧🍎

It’s peak apple season at the Jefferson Park Sunday Market, and there’s no better way to celebrate than with a classic homemade apple pie: simple, cozy, and bursting with Midwest flavor. 🍂

Here’s an easy recipe using market-fresh apples:

Ingredients:
6-8 medium apples peeled, cored, and sliced  (choose from the different varieties offered by Parra Farms & Six Gen)
¾ cup sugar
2 tbsp flour
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp lemon juice & zest
Pinch of ground cloves (optional)
2 pie crusts (homemade or store-bought)
1 tbsp butter
Directions:

Preheat oven to 425°F.
Peel, core, and slice apples. Toss with sugar, flour, cinnamon, nutmeg, optional clove, and lemon juice + zest.
Line a pie dish with one crust and fill with apple mixture. Dot with butter.
Cover with top crust, seal edges, and cut small slits for steam.
Bake 45–50 minutes until golden and bubbly. Cool before slicing (if you can wait!).

Serve warm with a scoop of ice cream for that perfect fall moment. 🍨✨
